This cocktail is perfect for those early fall days. We take the complexity of Kentucky Bourbon and pair it with an apricot simple syrup for a sweetness. A splash a sparkling wine lightens everything and provides balance.

Instructions
  1. Pour the bourbon, apricot simple syrup, and lemon juice into a mixing glass.
  2. Add Ice and shake
  3. Strain into a coup glass or champange glass
  4. Top with sparkling wine
  5. Garnish with lemon twist
Apricot Simple Syrup
  1. Add 1 cup water, 1 cup sugar to a pot
  2. Chop 1/4 cup of dried apricots and add to the pot
  3. Bring to a boil, stirring often to prevent burning
  4. Turn down the heat and let simmer for 5 minutes
  5. Remove from the heat and let the syrup cool to room temperature
  6. Strain the syrup into a clean bottle . It will keep in the refrigerator for 2-3 weeks
